At that time cooking schools, with their perfect mastery of the subject and their demonstration of processes, were only beginning to be thought of. I believe that if I could have found the rules of the best authorities for the different processes of cooking shortly stated, instead of having to seek and compare, learning to cook scientifically - that is to obtain sure results from a given process - might have been a business of a few months instead of years.
